Dalmatian Cupcakes

Yes, these cupcakes look like those famous spotted dogs. The chocolate cake has a hidden creamy filling and chocolate chip "spots." Kids love them!  

Dalmatian Cupcakes  

-Ingredients:

2 packages {3 oz each} softened cream cheese

1/3 cup sugar

1 egg

1 1/2 cups miniature or regular semisweet chocolate chips

1 box devil's food cake mix {Any Brand}

1 1/4 cups water

1/3 cup vegetable oil

3 eggs

1 container Rich & Creamy or Whipped vanilla frosting {Any Brand}

-Directions:

Step 1: Heat oven to 350°F {325°F for dark or nonstick pans}.

Step 2: Place paper baking cup in each of 24 regular-size muffin cups.

Step 3: In medium bowl, beat cream cheese, sugar and 1 egg with electric mixer on medium speed until smooth.

Step 4: Stir in 1 cup of the chocolate chips and set it aside to use later.

Step 5: Increase speed to medium; beat for about 2 minutes.

Step 6: Divide batter among muffin cups {1/4 cup in each}.

Step 7: Top each muffin cup with 1 heaping teaspoon cream cheese mixture.

Step 8: Bake for about 21 to 27 minutes or until tops spring back when touched lightly.

Step 9: Cool in pans for 10 minutes.

Step 10: Remove from pans to cooling racks. Cool completely for about 30 minutes.

Step 11: Frost the cupcakes with vanilla frosting.

Step 12: Sprinkle with remaining 1/2 cup chocolate chips.

Step 13: Store loosely covered in refrigerator.
