Strawberry Funfetti Cupcakes

Strawberry Funfetti  Cupcakes make the perfect Cupcakes for Valentine's Day or for summer parties.

~Ingredients:

-Funfetti Cupcake:

2 1/4 Cup All Purpose Flour.

1 Tablespoon Vanilla Extract.

1/2 Cup Butter.

2 Tablespoon Vegetable Oil.

1 1/4 Cups Milk.

1 Cup Rainbow Sprinkles.

1 Teaspoon Salt.

3 1/2 Teaspoon Baking Powder.

1 1/2 Cup Granulated Sugar.

3 Large Eggs.

-Strawberry Frosting:    

1 Packet (1.2 ounces) Freeze Dried Strawberries.*

1 Cup Unsalted Butter, softened.

1 1/2 Teaspoon Vanilla Extract.

3 - 4 Cups Powdered Sugar.

-Topping:**

Fresh Strawberry.

~Directions:

Step 1: Preheat oven to 350 degrees fahrenheit. Line the cupcake tray with liners. Set aside.

-Making the Cupcakes:

Step 2Place the softened butter into a bowl and mix on medium speed for 1 - 2 minutes.

Step 3Add in the milk, the oil, the vanilla extract and the eggs and mix on low for one minute.

Step 4: Add in the dry ingredients and combine on low for 30 seconds. Scrape down the sides of the bowl.

Step 5: Finish stirring by hand if not all of the ingredients are not well combined.

Step 6Using a large cookie scoop, divide the batter evenly, filling each liner 2/3 full. Careful not to overfill.

Step 7: Bake for 15 -18 minutes. Test the cupcakes for doneness by inserting a toothpick into the center of the cupcake. If the toothpick comes out clean, the cupcakes are done.

Step 8: Cool Completely before frosting.

-Making the Frosting:

Step 9Finely crush the freeze - dried berries in a blender and then use a sifter to only use the finer pieces. If you aren't piping your frosting you don't need to sift! 

Step 10Put in a bowl with butter and beat well on medium speed. 

Step 11Add vanilla extract and slowly add in powdered sugar until you reach your desired consistency.

Step 12Pipe onto cooled cupcakes and top with fresh berries and more sprinkles!

*We got it from Trader Joe's. You can also use 3 tablespoons strawberry puree.

**The strawberry is optional.
