I don't know about you guys but I don't really like people that have no idea what they are doing and ask to ride my horse. I usually don't know what to say, so I thought of some things TO say.
Simple way:

Rude way:
My horse is not a carnival pony.
Too busy!
Equestrian: Uh, sorry tomorrow we have a show, Tuesday the vet is coming, Wednesday the farrier is coming, Thursday is his/her day off and Friday we are going to another show.
Non-equestrian: What about Saturday and Sunday?
Equestrian: I think he/she is going to be lame.
And I guess if you don't mind people who don't know what they are doing ride your horse, just say...
