Crock Pot Enchilada Casserole

2- 14 ½ oz can crushed tomatoes

2 small onions

¾ tsp ground red pepper or crushed red pepper

salt

1- 6 oz can tomato paste

3 pks taco mix

4-8 cups cheese

18 flour tortillas

3 lb ground beef

Cook and set aside ground beef. Add onions, crushed red pepper and garlic in blender or chopper, blend or chop, add to large pan add seasonings and tomato sauce cook til boil simmer 5 minutes.

Place 3 or 4 tortillas on bottom of crock pot, layer ground beef, sauce, cheese add 3 to for tortillas repeat layers 2 more times ending with cheese

* Tip using corn tortillas turns this meal in a tamale casserole. Yum 

Cook this dish inside of a large (oval) crockpot / Slowcooker
