I think all demigods grow up at a young age but we never face normal grown situations. It always 'kill this, kill that' never 'pay bills, get a doctorate' which is normal mature thinking.
Ever since Percy convinced me to leave camp half-blood I thought it would be hard to adjust to normal living. Even though there some bumps in the way but i found something to blend both ideas of being a grown-up. I take online collage courses so does the rest of the demigods, Percy is working on his marine biology while Nico is looking in to some detail oriented courses and some art classes.
I even joined Nico in some his real world art classes because art need a real teacher not a online one. And I have to say art is great way to express myself.
We are not even thirty yet but we have a company and writing our Will and Statement which will be very helpful in our sudden demise.
It will be really helpful in Percy's case where he has become a cape crusader running around with Ironman and Captain America.
I am huge fan of Tony Stark and I hope we work together soon.
I have gotten my hands on enough alien tech to know how most of it works all I have to recalibrate it to fit my ideal product.
And balancing all of the things in my life is tiring and tightly scheduled.
