Genshin characters as their animal counterparts with reasons why :)
All in no particular order.

Barbara - lamb
~One of the most holy of God's creations
~Young, with time to grow and mature
~A follower
~Devoted
~An animal of prey: either feels like or is inferior in lots of ways to others
~Kind and sparing
~Cute ><
~Beautiful voice that she's not afraid to use
~Can be clumsy

Jean - dove
~A messenger to the City of Mondstadt
~Loving of her sister, friends, coworkers and disciples
~Always tries to keep the peace
~Graceful, gentle and pure
~Carries Barbatos' messages and vice versa (literally)
~Protects the city from violence
~Symbol of forgiveness - she helped to gain the forgiveness of Dvalin for his abandonment/corruption

Xingqiu - Vienna Blue Bunny Rabbit
~Physical attributes (hair, etc.)
~Used to be his favourite animal
~Although he hates carrots, headcanon that he learned that from bunny correlations when he was young as well as whatever his mother would make them into
~He admires stags from a distance, therefore he wouldn't *be* a stag
~Can be both social and in solitude
~Quiet in his own way
~Unique

Itto - Polar Bear
~A being of strength
~White hair/white fur
~A guiding spirit - will lead you on new adventures together with the Itto Clan
~Disappearing habitat just like his disappearing vision
~Built to endure, just like male polar bears
~Has many friends/lackeys, however for true strength he relies on himself
~Filled with courage and self-determination

Albedo - Least (snow) Weasel
~Blends into the crowd
~Predator
~Can be aggressive
~Cold climate-based habitat (Dragonspine)
~Just like there are many weasels (non-endangered), there are many Albedo's too
~A potential "bad luck" omen
~These creatures always plan ahead, just like Albedo
~A solitary being

Kaeya - snake
~Symbol of rebirth and healing (Khaenri'ah?)
~Defensive
~Hides much from the naked eye
~Close to the divine
~The cyclic nature of the cosmos - history repeating itself, potentially
~Persuasive and suave
~Sharp tongue
~A lost kingdom's salvation

Zhongli - elk
~A symbol of strength and empowerment
~A guiding symbol
~Encourages teamwork
~Reassuring
~Ability to pace himself - being around for so long has taught him many things, one of them that swiftness is not everything
~Defensive from predators
~Old soul
