Prepare Fruit

1 quart of fruit pulp to make the 2 1/2 cups of juice for the recipe (14-20 minutes depending on size)

Do NOT pick over ripe fruit units needed to add to pectin.

Clean pears using vegetable brush.

Wash in running water and place in covered saucepan with enough water to cover the fruit.

Boil until tender and soft, about 20 minutes.

Drain and mash.

Strain mashed fruit through cheesecloth.

Set aside so settlement can settle to bottom.

Don't use the sediment if you want clear jelly.
