My character, Killian Decuir, makes these blackberry pancakes in the prequel story The Incandescent. The blackberry pancakes are first mentioned in Chapter 3 ~ The Fairy.
These pancakes are very versatile. You can omit the blackberries and add ginger, allspice, and cardamom to make gingerbread pancakes; chocolate chips; anything you like!
This recipe is perfect for just one person, so if you want more pancakes, you can double the recipe. This makes about 5 pancakes, usually gone within 30 minutes.

Blackberry Pancakes ✨⚔️✨ Equipment ✨
~ Mixing bowl
~ Whisk or spoon
~ Frying pan or skillet
~ Flipper / Turner✨ Ingredients ✨
~ 1 cup (150g) all-purpose flour [plain flour]
~ 1 tablespoon sugar
~ 1 teaspoon baking powder
~ ¾ cup (190ml) milk [I use almond milk]
~ 2 tablespoon melted butter
~ 1 egg
~ 2 teaspoon vanilla extract
~ 1 teaspoon lemon juice or apple cider vinegar
~ 1 cup (150g) blackberries, fresh or frozen
[If frozen, don't thaw first]
~ 2 tablespoon butter divided, for frying✨ Instructions ✨
~ Add the flour, sugar, and baking powder to a large mixing bowl and whisk to combine.
~ Add the milk, melted butter, egg, vanilla, and lemon juice or apple cider vinegar, to a separate bowl and whisk to combine.
~ Pour the wet ingredients into the dry and gently whisk until just combined (the batter will still be lumpy, but you won't see streaks of flour).
~ Gently mix in the blackberries.
~ Heat a teaspoon of the butter in a non-stick frying pan or skillet over a medium heat. [Honestly, what I do, is I use the leftover butter that was heated on the plate to pour on the frying pan or skillet]
~ Add a ladle (about 1/3 cup) of batter. When the centre begins to bubble, turn it over and cook until both sides are golden. Repeat until the batter is all used.
