Yup, had to include another pancake recipe lol. This time from the pages of The Incandescent. My characters, Drave and Erasmo, get into a pancake fight and a tea dispute. They throw pancake batter at each other and rip tea packets, all while trying to either save or toss the mango tea in the trash.
But yeah! Enjoy these soft, wonderful buttermilk pancakes ✨
(Before Drave and Erasmo fling pancake batter at each other, and we're stuck with just a simple bowl of oatmeal with cinnamon and blueberries for breakfast)

🥞 Ingredients
~ 2 cups all-purpose flour
~ 1 teaspoon baking powder
~ ½ teaspoon sea salt
~ 2 tablespoons granulated sugar
~ 2 cups buttermilk
~ 2 large eggs, lightly beaten
~ 1 teaspoon vanilla extract🥞 Instructions
~ Whisk together the dry ingredients in a large bowl.
~ Whisk in the buttermilk, eggs and vanilla just until combined.
~ Heat a large skillet or griddle over medium heat.
~ Spray with non-stick cooking spray OR brush with butter or oil.
~ Ladle 1/3 - 1/2 cup batter onto the griddle for each pancake.
~ Flip the pancakes over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown.
