Finnish Salmon Soup (Lohikeitto)

ingredients:

450g salmon fillet (cubed)

4 potatoes (cubed)

1 onion (chopped)

2 carrots (sliced)

2 cups fish or vegetable broth

2 cups water

1 cup heavy cream

fresh dill (chopped)

butter for sautéing

salt and pepper

instructions:

1.    ⁠In a large pot, sauté chopped onions in butter until soft. Add cubed potatoes, sliced carrots, fish or vegetable broth, and water. Simmer until potatoes and carrots are tender.

2.    ⁠Stir in cubed salmon and cook until it turns opaque. Pour in heavy cream and season with salt and pepper. Serve garnished with fresh dill.
