Chocolate Cake

This cake, can help take away side effects from the beginning spell, and overall it is so good! 

For the cake:

150g butter, salted or unsalted but I tend to use salted250mls water250g dark chocolate, finely chopped (not NOT use milk, it will not work)300g plain flour60g cocoa1/2 tsp bicarbonate of soda1/2 tsp baking powder550g caster sugar4 large eggs, at room temperature30mls olive oil90mls milk10mls lemon juice (from a bottle is fine)For the ganache icing:300mls double cream300g dark chocolate, finely chopped


 Instructions 

Preheat the oven to 160C/fan 140C/gas mark 3 and line 2 x 20cm round tins. 

Melt together the butter, cold water and chocolate for the cake in a small saucepan. Once it's melted, remove the stuff from the heat and set it aside. Mix together the flour, cocoa, bicarbonate soda, baking powder and sugar.

 Add the melted chocolate mixture (butter, water, chocolate) to the dry mixture ( flour, cocoa, bicarbonate Soda, baking powder, sugar) along with the eggs and oil. Beat the mixture for 5 minutes, or until it is  smooth. In the meantime add the lemon juice to the milk to sour it. If you are looking into getting rid of the side effects, now is the time to add in:

A tear mixed with sugar, to soften the sadness.

And a mashed up leaf of mint, to give some flavour. 

Add this to the cake mixture and beat for another minute until it's  really creamy and smooth. Divide the batter equally between  two tins, and bake in the centre of the oven for 50 - 55 minutes until a well risen toothpick comes out of the centre of the cakes.  

Cool on a wire rack, out of the tins. Make the icing by scalding the cream in a saucepan (where it bubbles at the outer edges) and then stir in all the chopped chocolate until smooth.

 Leave to set at room temperature. Once thick use to sandwich and ice the cake.
