THIN CRUST PIZZA
INGREDIENTS:
2 1/2 cups all-purpose flour (may substitute whole wheat flour for 1 cup of the all-purpose)
1 (1/4 ounce) package active dry yeast
1/4 teaspoon salt
1 cup warm water
1/2-1 tablespoon olive oil
cornmeal, for sprinkling
DIRECTIONS:
1) Mix a little sugar into the warm water.
2) Sprinkle yeast on top.
3) Wait for 10 minutes or until it gets all foamy.
4) Pour into a large bowl.
5) Add flour, salt, olive oil.
6) Combine.
7) Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
8) Cover and let rest for 20-30 minutes.
9) Lightly grease two 12-inch pizza pans.
10) Sprinkle with a little bit of cornmeal.
11) Divide dough in half.
12) Place each half on a pizza pan and pat it with your fingers until it stretches over the whole pan.
13) Try to make it thicker around the edge.
14) If desired, pre-bake at 425 F for 10 minutes (I don't always do this).
15) Then spread with pizza sauce and use the toppings of your choice.
16) Bake at 425 F for 10-20 minutes longer or until bubbly and hot.
17) Makes 2 12-inch pizzas.
18) If you don't want to use all the dough, you can freeze it.
19) Take a portion of dough, form into a ball, rub olive oil over it and place it in a freezer bag (the oil makes it easier to take out of the bag).
20) When you want to make a pizza, take dough out of freezer and allow to thaw before using.
THE NEW PEANUT BUTTER AND JELLY
INGRIEDIENTS: 1/4 cup(s) peanut butter 2 tablespoon(s) apple butter 4 (10-inch) sandwich wraps, such as flour tortillas or lavash 2 tablespoon(s) apple jelly 1 apple, cored, halved, and cut into thin slices 8 slice(s) crisp, cooked bacon
DIRECTIONS: Assemble the sandwiches: In a small bowl, use a spoon to mix the peanut butter and apple butter together. On a clean work surface, lay the wraps and divide the peanut-butter mixture among them, spreading it equally on 1/2 of each wrap. Spread the apple jelly evenly on the other half of each. Place 4 or 5 slices of apple on the peanut-butter mixture and 2 strips of bacon on top of the apples. Fold the tortillas into wrap sandwiches.
STEAK WITH CRANBERRY SAUCE
INGRIEDIENTS: Cranberry Sauce: 2 cup(s) cranberries, fresh or defrosted 1 cup(s) diced white onion, from about 1 large onion 2 clove(s) garlic, sliced 1 cup(s) packed light brown sugar 1 cup(s) red wine vinegar 2 cup(s) dark ale or lager beer 1 cup(s) Worcestershire sauce 1/3 cup(s) soy sauce Steak: 6 (12 ounces each) boneless choice rib eye steaks Kosher salt Black pepper 3 tablespoon(s) olive oil
DIRECTIONS: 1) Make the sauce: Combine all ingredients in a stainless steel saucepan and simmer over medium-low heat, stirring occasionally, until sauce has thickened and reduced slightly, about 1 hour. 2) Working in batches, place sauce in a blender and process until smooth. Be careful to start blender at a low speed and allow steam to escape. Strain sauce through a fine mesh strainer and set aside. It will keep, covered, in the refrigerator up to 2 weeks. 3) Make the steak: Remove meat from refrigerator 1 hour before cooking. Warm a large skillet over medium-high heat. Season steak with salt and pepper to taste. Working in batches, add 1 tablespoon oil to pan and sear 2 steaks until deep golden, about 5 minutes. When steak releases easily from pan, flip and continue cooking about 4 minutes more for medium rare. For first two batches, remove slightly early and finish cooking in a 350-degree F oven for 10 to 20 minutes; meanwhile, repeat cooking process with remaining oil and steaks. 4) To serve: Place steaks on plates, and spoon sauce on the side.
