Sponge Cake

To make 1 sponge:

Ingredients:
•125g self-raising flour
•125g caster sugar
•125g butter (I tend to use salted but it doesn't matter)
•2eggs
•1 teaspoon baking powder

Method:
1) Preheat the oven to 340° F (170° C)
2) Sieve the flour and baking powder into a large bowl
3) Mix together the flour, baking powder, sugar and butter into a bread-crumb consistency (you will probably find it easiest to use your hands for this)
4) Stir in the eggs (try to stir quickly to prevent curdling)
5) Line the bottom of a 7" cake tin with grease-proof paper and spread a little bit of butter on the sides.
6) Fill the tin and bake for 15– 20 minutes.
7) Allow it to cool before removing the cake from the tin.
