Fortified Pumpkin Pie
Every year, I begged my Aunt Rena to give me her recipe for pumpkin pie. She never made just one... cause a slice of her pie was all anyone wanted.
Every year, her answer was the same "When you're sixteen, I'll tell you."
You better believe that, on my sixteenth birthday, I called her and reminded her bout her promise
When she cackled,and told me that it was the recipe off the Libby's can... I bout had a fit!
Theo told me the real secret... Rebel Yell. It is remarkable that a touch of bourbon can change an ordinary pie... into FORTIFIED PUMPKIN PIE!!!
Aunt Rena's Secret for
Fortified Pumpkin Pie
Ingredients
1 piecrust (I like Food Lion roll out crust... just roll it a little thinner between two sheets of wax paper first)
1 can Libby's pumpkin (NOT the mix! just the plain pumpkin)
3/4 C sugar
1 can evaporated milk
1/4 tsp. salt
2 tsp. pumpkin pie spice***
2 big eggs
**here's the secret! **
2 tablespoons bourbon (Rebel Yell:)))
Directions
put eggs,salt, spice, and bourbon into a bowl and wisk till foamy.
add pumpkin and mix well
add half the milk... mix... then the rest of the milk.
custard should be smooth
pour into that pie shell
follow the Libby's pumpkin can instructions for bake'n temp and times.
cook just till center of pie is jiggly... it will seize up as it cools.
***... this is different from the can.
