Olive Oil Cake

- 1 1/4 cups Flour

- 1 1/4 cups Flour

- 3/4 cups Sugar

- 2 Eggs

- 1/3 cup Olive Oil

- 1 teaspoon Vanilla Extract

- 1 teaspoon Baking Powder

- 1/2 teaspoon Baking Soda

- 1/2 teaspoon salt

- 1/2 teaspoon salt

1. Preheat oven to 350F.  Remember to grease pan beforehand, so the cake slips right out.

2. Mix sugar and egg together with the hand mixer, until blended.

3. Drizzle in the olive oil and vanilla and mix until light and smooth.

4. In a separate bowl sift together flour, salt, baking powder and baking soda.  Add flour mixture to wet in halves.

5. Pour into a pan (or pans) and bake 25 to 30 mins. (I could smell mine at 22mins and took them out, they were cooked completely) Let cool.

Frosting? (I made a whipping cream and put that on them)  or Powdered Sugar for dusting?

Makes eight servings.  Level: Easy
