This is the reason i really really hate because people barely even pay attention.
After DAMvTF, people started saying "omg Mabel is so selfish!!" but do you remember 5 episodes ago when they made a promise not to end up like Stan and Ford?

Stan and Ford's relationship was ruined because Ford became too obsessed with his dream.
If Dipper had chosen to stay with Ford, everything would go wrong. Ford and Stan would have never made up, Mabel would have to suffer ALONE without her other half, and Dipper would end up like Ford, so caught up in his dream that he neglected those around him. basically, Dipper and Mabel would end up repeating history. nobody would be happy.
plus, Alex Hirsch himself said that the theme of the show is that childhood is precious and you should cherish it while it lasts.

Dipper going with Ford would pretty much make him grow up too fast and thats what Alex and the show was implying.
