Chicken Yassa
Chicken Yassa is one of those recipes I can unequivocally say that I have mastered over time. It has become an unspoken tradition that in the event of a potluck, my sister and I are to show up with this delicious "mustard chicken", as a friend called it. Chicken, onions, mustard and some spices are all you really need to prepare this traditional Gambian dish. It is relatively easy to prepare and very tasty. Total cooking time is about an hour and a half.Ingredients:
- Onions
- Mustard
- Black pepper
- Garlic
- Habanero peppers
- Jalapeño Pepper
- Bell peppers
- Maggie cube/ salt
- ChickenInstructions:
- In a food processor, blend a bulb of garlic, two tablespoons of black pepper, one Maggie cube/ a teaspoon of salt, and one habanero pepper, about 5 tablespoons of mustard
- Clean chicken and season with half of blended ingredients
- Peel and slice 2 large onions and season with the remaining blended spices
- Grill seasoned chicken in oven until well cooked
- In a cooking pot, add 1/4 cup of canola oil and put heat on medium
- Fry seasoned onions, cover pot and allow onion to to cook for about 10 minutes
- Once the spices in the onions have cooked and onions have softened, add grilled chicken.
- Add half a small cup of small water, cover pot and allow to cook for about 10 minutes
