Don't make the already implemented love interest of a desired character automatically be a snot, so then the obvious choice for the desired character is to choose your OC over him/her/them. That's lazy writing.
Example: Anakin Skywalker X OC. Anakin has a love interest already — Padmé Amidala — whole he loves in canon. But, in your fanfiction, he doesn't have to! In this situation, I would introduce the notion that his crush on her went away over time, which leaves room for your OC to have development with him. Not to say this is your only option — the sky's the limit for these possibilities.
