Black Bean Nachos.

Serves 4. Prep time = 15 mins. Cooking time = 20 mins. 

Ingredients: 1  bag of corn tortilla chips, 1 can black beans, and 1/2 cup salsa. Optional: 1/2 cup chopped, roasted red peppers, 1/2 cup of chopped cilantro, and 1/2 cup of chopped green onions.  

Equipment: 1 large baking pan and aluminum foil. 

Arrange chips in a single layer on 1 large foil-lined baking pans. 

Sprinkle half of cheese over the chips. 

Combine black beans and salsa, (and other optional ingredients); spoon evenly over cheese.

Sprinkle remaining cheese. 

Bake in preheated oven 357 Fahrenheit for 12 minutes or until heated through and cheese is melted. 

Optional: Top with cilantro.
