Ingredients
1/2 cup (125g) butter
3/4 cup (190g) caster sugar
2eggs
11/2 cup (225g) self-raising flour
1/2 cup (125ml) milk
1/4 tsp vanilla esenceMethod
1. Pre-heat oven to 180C. Line patty pans with paper cases.
2.cream butter with sugar untill pale and fluffy.
3.break egg into seperate bowl to check for freshness, then beat into butter mixture until just combined. If mixture starts to curdle add a tabnlespoon of flour. Repeay with secomd egg
4. Sift flour and add to butter mixture, alternating with milk and vanilla. Stir mixture gently but thoroughly. Mixture should be a soft dropping consistency.
5. Spoon mixture into paper cases and bake for 15-20 minutes, or until cooked. DO NOT over-fill cases. Mixture will rise.
6. Allow to cool for 5 minutes beforere moving to a cooling rack.
7.serve dusted with icing sugar or cover with icing.
