spinach and ricotta filo triangle parcels- makes 8 big triangles

ingredients:
pasrty;
12 sheets bought fio pastry (or puff pastry works aswell)
100g melted butter

filling:
150g ricotta cheese
60g frozen chopped spinach, thawed and squeezed dry
11/2 spring onion, fnely sliced
pinch nutmeg
pinch lemon zest

decoration:
1 egg lightly beaten

method:
1.preheat oven to 200oc. place ricotta,spinach,onion and nutmeg in bowl and mix well.
2.lay one sheet of filo on bench and brush with melted butter. lay another sheet of filo on top. repeat to make 3 layers. brush this top layer wih melted butter
3.cut pastry in half horizontally. place a tablespoon of mixture on one corner and fold over to make a triangle. keep folding the pastry over along the length of the filo rectangle, until a triangle parcel is made. secure the end with more melted butter.
4.repeat with the remaining pastry to make 8 triangles
5.place triangles on baking paper lined baking tray. brush with an egg wash and put in oven. bake for 15mins or until golden brown. serve warm.
