Sweet Potato Hash

What you need:

- 1 large sweet potato

- 1 tablespoon of olive oil

- 1/2 of a red onion

- 1 clove garlic

- 2 green onions

- 1 tablespoon fresh rosemary

- 4 eggs

- large pan + lid

- knife

- cutting board

How to make:

1. Pour the oil into the pan and heat it over medium-high heat. While the oil heats up, dice the sweet potato and wait until the oil sizzles before adding the sweet potato to the pan. Cover with the lid and let it cook for 10 minutes or until it begins to soften, occasionally stirring throughout.

2. Take the garlic and red onion and dice them into small pieces, then add them to the pan after at least the ten minutes have gone by. Next, chop the green onion and the rosemary finely and add to the skillet.

3. Make four indents separate from each other in the vegetables, and crack an egg in each of them. After that, cover the pan with the lid again and cook the hash for about 5 minutes. If the eggs look fully cooked, remove the pan from heat and serve the hash.
