Towa Kebabs

What you need:

- 500g of kangaroo fillets 

- 3 cloves of minced garlic

- 1 tbsp of rosemary

- 1 tbsp of basil

- 1 tbsp of mint

- 1 tsp of cumin powder

- 1 tsp of salt

- 1 tsp of pepper

- 1/4 cup of olive oil

- wooden skewers

- plastic container

- metal bowl

- large knife

- cutting board

- saran wrap

How to make:

1. Fill the plastic container with cold water and submerge the wooden skewers in it, then put the container in the fridge. This will prevent the skewers to burn on the barbecue, but don't leave them long enough to be trapped in an ice cube.

2. Get out the cutting board, the cut up the kangaroo fillets into small chunks about 2cm-3cm long and put them into the bowl. 

3. Put the garlic, rosemary, basil, mint, pepper, salt, cumin, and olive oil into the bowl, and mix it with the meat. Put saran wrap over the bowl and leave the bowl in the fridge for 2 hours to marinate. Halfway through this, take the skewers out of the water.

4. After 2 hours, take the meat out of the bowl and place it on the skewers, 3 chucks each. Take the kebabs to the barbecue and cook them for 2-3 minutes on each side or until the meat looks cooked. Serve nice and hot!
