Apparently it's canon that Agustin's family live and is still alive in Encanto but that Agustin was born in Bogotá. Makes you how he got there...Him being the nephew to the priest is my headcanon.

Julieta Madrigal was 5 year old when she got the power to heal anyone.

Julieta Madrigal was 10 years old when she found out that she can control how much or how little her food can heal someone.

Julieta Madrigal was 15 years old when she found out that she can use poison in her food to kill someone.

Julieta Madrigal was 19 when she starts to dates Agustin and her life change. Once a peaceful and sometimes stressful life was now one full of chaos, death, and blood.

Julieta Madrigal wouldn't change it for the world.

Julieta is 14 when she thinks about death. She always think about it, since she first started to cook and use her gift to help the town and to heal them. How much flour does this recipe needs? Will it make her healing worst or better? Will this food heal someone with an allergic reaction or not? Will this heal this dying man? Will that family hate when her when he dies, saying that she didn't do enough to save them?

Julieta is the town's savior and their provider. She can control who lives, who dies. Who gets her healing and who doesn't.

Well, she would be able to, if Mama allowed it. But no, Julieta must save and take care of every. Single. Person. No matter if their a criminal or innocent. No matter if they hurt her or her siblings. She has to.

Julieta wonders what would happen if she didn't save the town? Would they survived on their own? Yeah the town was build from the ground up by these people but do they seriously need to see her for a damn splinter? Julieta feels like if she were to even take a day off the town would destroy itself. That's not counted the times we're she's sick.

As Julieta works from sunrise to sunset making food after food, barely leaving the kitchen (is this her life now? To be trap in this one room? Is this her room now? She spend more time here then her own bed.) makes fresh food (Mama doesn't want to be wasteful, any food that isn't use in one day gets use tomorrow or thrown to the animals.) she wonders if there is any way to change her life. To make the work for her and her siblings stop.

Julieta accidentally spills raw blood into one of her dishes, not noticing until it was cooked. She still served it to the town, it was all cook out, but that made Julieta wonder, could she use any ingredients and would the food turn out fine or safe to eat? What about uneatable food? Chemicals?

The next day Julieta dumps dish soap and feed it to the neighbor, the old lady says it taste funny but there was no physical or mental problems when Julieta monitored her for the rest of the month.

Julieta Madrigal can heal anyone of anything. Kind of. Sicknesses, broken bones, pain, allergies, the list goes on. It would be much easier to explain what she can't heal.

The dead
Animals
Symptoms that are caused by magic

While she can get rid of illness, she can't get rid of an illness if it's very powerful. Influenza, for example, she can only help the body fight off the illness. But if the villagers combine Julieta's healing food with the right vaccine they can be good as new. As for symptoms that are caused by magic, that is base off her family.
