Baked Cheesecake

Yes! You read it correct. It's Cheesecake time! It's gonna be baked and eggless too. On majority of the occasions, it's difficult to even find good baked eggless cheesecake in stores. So this time we are gonna make an amazing one at home 💗

Ingredients:1/3rd Cup Almonds1/3rd Cup Walnuts1/4th Cup Marie Biscuit or Any Other Plain Non Flavored Biscuit/Cracker1 Teaspoon Melted Butter1/2 Cup Hung Curd1 Cup Powdered Sugar1/2 Cup Cream Cheese1 Teaspoon Vanilla Extract

Ingredients:
1/3rd Cup Almonds
1/3rd Cup Walnuts
1/4th Cup Marie Biscuit or Any Other Plain Non Flavored Biscuit/Cracker
1 Teaspoon Melted Butter
1/2 Cup Hung Curd
1 Cup Powdered Sugar
1/2 Cup Cream Cheese
1 Teaspoon Vanilla Extract

Procedure:
1. In a mixer crush almonds, walnuts and the biscuits.
2. In a bowl add the above crushed mixture and add in melted butter and mix well. Everything should be able to come together and not be crumbly. If needed add one more teaspoon of melted butter.
3. Grease a baking tin with butter paper and add in the above mixture. Press it on the bottom of the pan just that it form a even layer. Make sure there are no cracks.
4. In a different bowl whisk together the hung curd, cream cheese and sugar into smooth consistency. There should not be any lumps.
5. Once a smooth batter is formed, gradually add in the vanilla extract, making sure not to over whisk it.
6. Pour in the baking tin over the base and put to bake in a preheated oven at 160 Celsius for 20 minutes.

Note:
1. I used a hand whisk and not electric beater for this one. You can use an electric beater but make sure not to over whisk.
2. Hung curd is simply made by removing the excessive water from curd or yogurt by hanging it in a cloth for 3-4 hours.
