Okay a few things first. All of the magic and supernatural stuff they hide in either the floor boards, or in the hidden basement (which is hidden by magic).
They live on the outskirts of Beacon Hills, closer to the Ocean instead of the woods. Kol wanted something different since for the past 1000 years most of where he lived was surrounded by woods. They live in California, he wanted to act like it.
And while yes, there are only three people living in the house, they're Mikaelsons. The bigger the better. Plus this way the family could visit. However few times it would be.
