Sugar
3 tbsp. flour
Pinch of salt
2 eggs, seporated
1 c. milk, scalded
3/4 tsp. lemon juice
1/2 c. cream
2 lg. bananas, sliced
1 baked 9-in pie shell
Combine 1/3 cup sugar, flour and salt in sauce-pan; mix well. Blind in egg yolks, milk, and lemon juice. Cook over medium heat until thick, stirring constantly. Stir in cream; remove from heat. Fold in bananas. Pour into pie shell. Beat egg whites until soft peaks form. Add 1 tablespoon sugar gradually, beating until stiff. Spread over filling, sealing to edge. Bake at 375 degrees for 5 to 7 minutes or until brown.
