Banana Cake

Banana Cake:

2 cups sifted flour

1 teaspoon baking soda

1 teaspoon cinnamon

2 cups sugar

1 teaspoon salt

2 cups chopped ripe bananas

1 1/2 cups vegetable oil

1 1/2 teaspoons vanilla extract

3 eggs

1 (8-ounce) can crushed pineapple

8 ounces cream cheese, softened

3 cups sifted confectioners' sugar

1/2 teaspoon vanilla extract

2 tablespoons (about) milk

1: Sift dry ingrediants together. Add bananas, oil, 1 1/2 teaspoons vanilla, eggs and undrained pineapple. Stir to blend, do not beat.

2: Pour into lightly greased tube pan. Bake at 350 degrees for 1 hour and 20 minutes or until cake tests done. Cool in pan on wire rack. Invert onto serving plate.

3: Blend cream cheese with confectioners' sugar and 1/2 teaspoon vanilla in separate bowl for frosting. Add enough milk gradually to make of spreading consistency. Frost cake.
