Chicken Milano

I'd like to dedicate this recipe to my lovely friend Alison for letting me crash her apartment to use her kitchen since my stove is currently not working.

This is really delicious and pretty easy to make. I made it last night for some friends and served it over spaghetti noodles and they absolutely loved it.

You will need: 3 medium bowls, a skillet, a plate with paper towels on it, an 8x12 baking dish, non-stick cooking spray, and aluminum foil.

½ c fine, dry breadcrumbs

¼ c grated Parmesan Cheese

¼ tsp dried whole basil

¼ tsp whole oregano

1 egg, beaten

3 Tbsp olive oil

1 (8 oz) can tomato sauce *

1.5 oz package spaghetti sauce mix *

6 chicken breast halves, skinned

6 oz Mozzarella cheese, sliced or grated

Combine first 4 ingredients in medium bowl. Place beaten egg in another. Dip chicken in egg, and dredge in breadcrumb mixture making sure it is thoroughly covered.

Heat oil in large skillet. Brown chicken on both sides. Remove chicken from skillet and drain well on paper towels.

Arrange chicken in lightly greased 12x8x2 in baking dish.

Combine tomato sauce and spaghetti sauce mix; stir well, spoon mixture over chicken. Cover with aluminum foil and bake at 350F for 25 minutes. Remove from oven. Place 1-2 slices of cheese over each breast half. Bake uncovered until cheese melts (about 2-3 minutes)

* you can substitute a jar of spaghetti sauce instead of using the tomato sauce and spaghetti packet
