My dad made this for me a while back and I absolutely loved it. Its something different to eat for lunch when you are sick of pb&j and dont want to spend a whole lot of time cooking.
You will need: a cookie sheet, a sharp knife, a bowl, and a brush.
1 C shredded Mozzarella Cheese
1 c sliced & quartered pepperoni
¼ c minced onion
2 Tbsp chopped parsley
3 Tbsp olive oil
2 Tbsp Parmesan cheese
4 baguette rolls or one long loaf of French or Italian bread split in half lengthwise
Combine all ingredients except rolls and parmesan cheese. Spread mixture on the cut surface of rolls, close rolls and brush the tops with additional oil and sprinkle with parmesan cheese. Bake at 350F for 10 minutes or until golden and heated through.
Makes 6-8 servings
