Easy Chicken Alfredo

This recipe is really easy and can be adjusted to make lots of food. Last time my friends and I got together for a movie night we made LOTS of chicken alfredo, garlic bread and a salad. It is really simple, takes about a half hour, and is very tastey.

You will need .... a large pot to cook the noodles in, a collander (noodle strainer), and a skillet.

1 pound of boneless skinless chicken breast. (this is about whole a chicken breast)

8 oz package broad No-Yolk noodles (this is the brand I use but any wide noodle will do, the wider the noodle the better the sauce will stick)

2 Jars Classico Alfredo sauce ( I also use Bertolli so whichever is fine)

salt and pepper

vegetable oil

Follow the directions on the package of noodles.  While the water for your noodles is heating up you want to start preparing your chicken.

Slice the raw chicken breast up into about 1/2 inch to 1/4 inch strips. Lightly sprinkle the raw chicken with salt and pepper.

Place 1-2 Tablespoons of vegetable oil into the bottom of the skillet, it should be just enough to cover the bottom of the skillet when you swirl it around. Place the skillet on the stove on medium heat. when the skillet is hot place the chicken strips in the skillet. Cook the strips all the way through and remove from the skillet when done. BEWARE hot oil will 'pop' when it starts to get really hot and if it gets on you it will hurt so make sure that you have just enough oil to cover the bottom of the skillet.

The water in the pot should be boiling by the time your chicken is cooked. Follow the directions on the noodle package and cook the whole bag.

While your noodles are cooking you can cut up the chicken into smaller pieces. This will help make  it look like there is more chicken than there actually is. If you cube the chicken then there should be some in almost everybite of noodles later on.

When the noodles are done drain the water and put the noodles back in the pot. Pour both jars of alfredo sauce over the noodles and add the chicken. Stir untill all of the noodles are covered. This will make enough for 5-6 people.
