There are only two ways to use an apostrophe,
1) if something belongs to someone/thing
The dog's toy.
2) if it is to replace a letter, usually it will be the i in is for it is, or it will be the a in are
There's a star man in the sky.
We're having a picnic
If a name ends with an s, like Jess or if there is a plural like flowers then you can opt to just have the apostrophe on the s.
Jess' money.
