mango crepes

mango was by far, angel's most favourable fruit. she preferred it over all other foods. unfortunately, mango was only sold in summer where the weather was perfect. lady peanut and angel's mother took her to a fancy restaurant in hopes of buying a fresh and chilled mango crepe for angel's hard work at school.

as the dish was served, angel wondered, "maybe we could recreate this at home when summer comes along!"

"you're right and i think there's a recipe in my book, back at home, too." lady peanut chimed.

Ingredients:

- 320g of PrimaMix Crepe Mix
- 3 Eggs (Medium size preferably)
- 60ml of Melted Butter or any of the alternatives from the picture above
- 400-410ml of Water

Method:

1. Mix eggs, butter and about half the amount of water into a bowl for 1-2 minutes
2. Add the mix and stir to blend it to a uniform paste
3. Gradually, add the remaining water and mix until smooth batter forms
4. Let batter stand for roughly 10-15 minutes. Stir thoroughly before using the batter to cook
5. Cook batter in a crepe maker or non-stick frying pan (I used the pan, the following steps involve a pan) at medium heat
6. If you are using a pan, pour a bit of the mix in and spread across the surface of the pan, make sure it is a thin layer and flip when ready
7. Decorating: put a dollop of fresh cream (Whipped or thickened cream with icing sugar) in the centre of the crepe then add heaps of mangos on top, add less cream on top
8. Fold the top and bottom flaps first then the left and right, flip, and serve!
