at our african barbecues, these 'braaibroodjies' - barbecued sandwiches - are a staple and a must (tastes even better the following day, some say, for breakfast with coffee, though i am not a fan of that) as a side dish to saddle, loin or neck chops or steak or any neat cut of meat suited for barbecue - you cannot barbecue stewing meat obviously - and boerewors (boer sausage - the best being home made by families, each one swearing their ground beef recipe is better than anyone else's. there are competitions for the best sausage mince recipes) and sosaties (curried beef/chicken kebabs). i remove the tomato skins before putting them between two slices of bread, together with cheddar cheese and thinly sliced raw onion. a bit of garlic butter both in and outside the slices gives that extra satisfaction, i swear. the barbecuing is done last on the coolest coals because the tomato and onion has to be cooked and the bread not burnt. very plain, cold potato salad compliments this meal.
