Greens (leaves) - can be chopped up and eaten raw; also cooked to lessen bitter taste

Safe to eat entire dandelion; stem/floret can be eaten raw

Looks - 5-45 cm or 2-18 in tall; leaves - jagged w/ deep lobes, similar appearance to chicory leaves; stems are hollow w/ white juice

Greens should be harvested before flowering begins

Harvest flower after it rains helps to get it out

Dandelion flowers should be eaten immediately after harvest

WARNING - never harvest/eat dandelions from areas that have had pesticides/herbicides used or they will make you sick
