Strawberry Champagne:
Ingredients-
4 shots orange-flavored liqueur
4 teaspoons honey
4 fresh strawberries, with tops trimmed
1 bottle Champagne, chilled
Equipment: 4 chilled Champagne flutesDirections:
Add the orange-flavored liqueur, honey and strawberries to a food processor and process until smooth. Fill the chilled glasses halfway with the strawberry mixture and then fill the rest of the glass with Champagne.
(4 servings)
Blue Shoe (non-alcoholic) :
Ingredients:
3 ounces blue Hawaiian Punch (or any similar blue fruity beverage)
2 ounces white cranberry juice
7-UpDirections:
Chill the ingredients beforehand. Or use ice. Pour the blue fruit punch into a large, chilled martini glass, then the white cranberry juice, and then fill the rest of it with 7-up.
Cranberry Sparkler (Non alcoholic) :
Ingredients:
1 1/2 ounces Blackberry Puree
2 ounces white cranberry juice
2 to 3 ounces sparkling water
1 sprig mint, for garnishDirections:
Place blackberry puree and cranberry juice in a champagne flute. Add sparkling water to fill. Garnish with mint. (Chill if want)
Cherry Bombs :
Ingredients:
1 cup grenadine (or any other pomegranate syrup)
1 liter clear citrus soda, or seltzer ( Ex: Seven-up, sprite, lemon-lime soda)
18 maraschino cherriesDirections
1. Place 2 cups water in a medium saucepan, and bring to a boil over medium-high heat. Add grenadine; stir to combine. Pour mixture into two ice-cube trays. Freeze until solid, 2 hours or overnight.
2. Fill six glasses with grenadine ice cubes. Top with soda. Garnish with cherries, and serve.
Sweetheart Spritzer :
Ingredients:
Fresh raspberries
Raspberry Lemonade
Pink ChampagneDirections:
Place Fresh raspberries in a glass and pour raspberry lemonade to about half way. Top the glass with pink champagne and drink right away.
Sweet Chicken Bacon Wraps :
Ingredients-
1 1/2 lbs boneless skinless chicken breasts
1 (1 lb) package sliced bacon
3/4 cup firmly packed brown sugar
2 tablespoons chili powderDirections:
1. Preheat oven to 350°F.
2. Cut chicken breasts into 1-inch cubes.
3. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick where the bacon ends / overlaps to hold it in place.
4. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture.
5. Line your pan with tinfoil to clean up faster. Coat it with non-stick cooking spray. Place chicken on pan.
6. Bake at 350°F for 30 to 35 minutes, or until bacon is crisp.
Oven Baked Coconut Shrimp :
(Servings per recipe 26)
Ingredients:
26 large uncooked shrimp (peeled, devained and leave tails intact)
1/3 cup cornstarch
1 teaspoon salt
1/2 teaspoon ground red pepper (can use more)
3 large egg whites
1 1/2 cups sweetened flaked coconutDirections:
1. Set oven to 375 degrees F.
2. Rinse the shrimp under cold water and pat dry with paper towels.
3. In a shallow dish combine the cornstarch with salt and red pepper; stir to combine.
4. Place the egg whites in a medium bowl; beat using an electric mixer on high speed until frothy (about 2 minutes).
5. Place the coconut in a shallow dish.
6. Working one shrimp at a time dredge the shrimp firstly in the cornstarch mixture, then dip in egg whites and then in shredded coconut.
7. Place the shrimp on a foil-lined baking sheet that has been generously coated with cooking spray.
8. Repeat with remaining shrimp (cornstarch, then egg white and then in coconut).
9. Lightly spray the shrimp with cooking spray.
10. Bake for about 20 minutes or until the shrimp are done, turn the shrimp after 10 minutes of cooking making that 10 minutes per side to cook evenly.
Reese's Squares (no bake) :
Ingredients:
1 1/2 cups graham cracker crumbs
1 lb confectioners' sugar (3 to 3 1/2 cups)
1 1/2 cups peanut butter
1 cup butter, melted
1 (12 ounce) bag milk chocolate chipsDirections:
1. Combine graham crumbs, sugar and peanut butter and mix well.
2. Blend in melted butter until well combined.
3. Line your pan with wax paper or tinfoil. Press mixture evenly into a 9 x 13 inch pan.
4. Melt chocolate chips in microwave or in double boiler.
5. Spread over peanut butter mixture.
6. Chill until just set and cut into bars (these are very hard to cut if the chocolate gets "rock hard". If you eat them right out of the fridge, the texture isn't quite right. Eat them at room temperature, it will taste like the real thing!
Chocolate Peanut Butter Balls :
Ingredients:
2 tablespoons butter, softened
1 2/3 cups peanut butter
2 cups icing sugar
2 cups Rice Krispies
1 cup dipping chocolateDirections:
1. Mix together all ingredients by hand, except chocolate.
2. Form into balls with about 1-2 tablespoons ( if mix is too runny or soft, add more rice Krispies, if its too crumbly, add more peanut butter.)
3. Put on a cookie sheet on parchment paper, and refrigerate 1 hour or more.
4. Melt chocolate over double boiler or in saucepan over low heat.
5. Dip balls in chocolate, and place back on parchment paper and put in the fridge until set.
6. Store in a tight container in the fridge. Enjoy!
