"Sophie" may be her first name, but "Foster" has more meaning behind it.
Sophie is literally a foster kid—she has three sets of parents. Sophie had to leave her human family behind, which was a really tough thing to do.
When Keefe calls Sophie "Foster" he's silently reminding her that she's strong and will overcome whatever adversity is thrown at her, because she's already done it.
It may have seemed like a simple joke at first, but there's more meaning behind Keefe's words than we realize.
Fitz calling Sophie by her first name has no meaning behind it because it's simply her name and what she's branded as.
Sophie's last name is, in truth, more important than her first name. It shows the truth and reality from her past, and the things she's had to deal with.
And guess which boy calls her Foster?
That's right.
Keefe.
