South African coconut ice

Coconut ice is a sweet coconut treat that you'll usually find at Indian spice shops here in South Africa. I remember eating it a lot during Diwali which is the Festival of Lights celebrated here. It's very easy to make and very delicious. But it is very sweet, so definitely don't make this recipe if you're on a diet.

Ingredients

400 g sugar
1⁄2 cup milk
120 g desiccated coconut
Red/ pink food colouring, a dash

Method

Boil the sugar and milk for 8–9 minutes.

Stir in the coconut and mix well

Press one half of the mixture into a greased dish.

Add a spot of food colouring to the remaining mixture and press it on top of the white layer. Cool and cut into bars.
