Here, only nobles can read and write and Balinor taught Hunith how to write both village and noble english (noble english being used on more formal occasions). Hunith teaches Merlin to write both too.

Gaius is out to help fix another outbreak of the sweating disease and gives Merlin the recipe for the medicine of Uther's scar. Merlin being Merlin forgets to give Uther his medicine because he was busy writing Arthur's dinner speech. Uther comes into Gaius' office/chambers to look for Gaius but doesn't find him, instead, he finds Merlin, who was busy reading up on Camelot history to write Arthur's speech properly. Uther on the other hand is bewildered to see a 'mere serving boy' reading and writing. He approaches Merlin and asks Merlin what he is reading. Merlin jumps and drops the book and is shocked to see Uther standing before him. He quickly bows and tells him that he was reading up on Camelot's history. When asked why, he said that he found it fascinating (Uther can't find out that Arthur is not the one writing his speeches cuz that could land Arthur in trouble which Merlin did not want). When asked how he learnt to read and write in the first place, Merlin lied that a nice noble had come to Ealdor to rest while on his way to Camelot and taught him to read and write, seeing that he was genuinely eager to learn it, and the rest he learnt from seeing Arthur write his speeches.

Uther, seeing the parchment paper snatched it and Merlin went to panic mode. Uther said that lying to the king could land him in the stocks but since Merlin still didn't want to betray Arthur he said that he was simply reading up on Camelot's history and writing points which he liked.

Uther realised that Merlin was writing Arthur's speeches as soon as he read the paper, landing Merlin in the stocks but Uther was still angry at Arthur for not writing his speeches. Merlin, in a desperate attempt to save Arthur said that he did write his own speeches but since this week was especially hectic for him he had asked Merlin to write his speech for him. Uther was impressed with his loyalty to Arthur because he stayed shut up for so long until the matter of punishing Arthur came up, and realising that that was an important trait to have in a servant, lessened his punishment from 1 week in the stocks to 1 day.

Merlin was grateful and then remembered about Uther's medicine, brewed it and gave it to Uther, Uther asked him where Gaius was gone, Merlin answered that Gaius had gone to the lower town to fix another outbreak of the sweating sickness.

And from then on, whenever Uther was too busy with his kingly duties or just too tired, Merlin would be the one to write his speeches.

And on those days, Uther got a lot of praises for his wonderful speech.
