INGREDIENTS:
-1 cup all-purpose flour
-1 tablespoon baking powder
-1 teaspoon pumpkin pie spice
-1 teaspoon cinnamon
-¼ teaspoon nutmeg
-¼ teaspoon salt
-1 cup whole milk
-⅓ cup pumpkin purée
-1 egg
-2 tablespoons packed brown sugar
-½ teaspoon vanilla extract
-2 tablespoons melted butter
DIRECTIONS:
1. Preheat a skillet to 350 degrees. (If using a pan, you can put it on medium-low later).
2. Combine the pumpkin pie spice, flour, baking powder, cinnamon, nutmeg, brown sugar, and salt in a large bowl.
3. In a separate bowl, combine the milk, pumpkin purée, egg, vanilla, and butter. Pour the wet ingredients into the dry, and stir.
4. Pour your pancakes until they're the size you prefer, and flip when the edges become round and bubbles have formed on the surface.
5.Stack and serve with whipped cream and maple syrup!
