RECIPE: Adam's Mom's Famous Pumpkin Pecan Ghost Pancakes

INGREDIENTS:

Pancakes:

-2 cups all-purpose flour

-3 tablespoons packed brown sugar

-2 ½ teaspoons baking powder

-½ teaspoon baking soda

-1 tablespoon pumpkin pie spice

-1 tablespoon cinnamon

-1 teaspoon ginger spice

-½ teaspoon cloves

-½ teaspoon nutmeg

-½ teaspoon salt

-¾ cup chopped pecans

-¾ cup pumpkin purée

-1 ½ cups whole milk

-½ cup melted butter

-2 large eggs

-1 ¼ teaspoons vanilla extract

-Chocolate chips for decoration

Pecan Topping:

-½ cup finely chopped pecans

-4 tablespoons butter

-½ cup maple syrup

-2 tablespoons brown sugar

-1 teaspoon cinnamon

-½ teaspoon nutmeg

Homemade Whipped Topping:

-1 cup heavy whipping cream

-1 ½ teaspoon vanilla extract

-1 teaspoon cinnamon

-1 tablespoon confectioners' sugar

DIRECTIONS: Pancakes

Preheat a skillet to 350 degrees. (If using a pan, you can put it on medium-low later).

Combine the flour, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, ginger, cloves, nutmeg, and salt.

In a separate bowl, combine the whole milk, pumpkin purée, eggs, vanilla extract, and melted butter. Pour the wet ingredients into the dry, and stir.

Fold in the chopped pecans.

Pour your pancakes until they're the size you prefer into long ghost-like ovals, and flip when the edges become round and bubbles have formed on the surface. Place two chocolate chips as eyes on your ghosts!

Top with the pecan topping, maple syrup, and homemade whipped topping. Enjoy!

DIRECTIONS: Pecan Topping

Place the finely chopped pecans and butter onto a medium-heat pan until the butter is fully melted and the pecans are toasted. Add in the brown sugar until it dissolves. Stir until the pecans are evenly coated in the brown sugar and butter mixture.

Stir in the syrup until fully warmed, and top with cinnamon and nutmeg.

DIRECTIONS: Homemade Whipped Topping

Whip the heavy whipping cream until stiff peaks begin to form, then beat in vanilla, sugar, and cinnamon.

Stop beating once the whipped topping is at the desired consistency.
