One reason cats hate water is because their fur isn't very ideal for being soaked. It can become waterlogged if they get too wet, which can then weigh the cat down. It could then possibly drown from its inability to float.
Not all cats hate water, though. Those in the wild swim across streams and rivers and such. Their native locations play a role- those in the cold severely dislike it- it just makes them colder, while in warmer places, it's cool and refreshing.
