Gabriel-
First of all, he's the king of the tricks. He's known as the trickster. April Fools Day is literally every day of the year. But he goes all out, making you scream, cry, laugh, and hit him...lots. He now calls it 'Official Gabriel Day'.
Dean-
It's a classic trick. Every year you and Sam find a car that looks similar to the Impala, sometimes even finding an Impala. You two either paint it different colors or trash it. You would think he would be use to it but he forgets April Fools Day even exists and to record his reaction is priceless.
Sam:
Taking out his shampoo and conditioner and towels and clothes when he's in the bathroom. He's forced to come out starch naked, whining about how Dean and you always take his stuff. It's great actually.
Castiel-
Mainly confused anytime you prank him. He's no fun sometimes. But, once, after consulting Dean, he faked being human, dressing in normal clothes and forcing himself to eat. It wasn't so much a prank- just that he sucks at making you confused.
