Hellsing was and still is one if my all time favorite anime, surprise surprise, it's an older one. Even the remake is a bit old by now, spoilers ahead for one helluva anime!
Hellsing is a Vampire themed anime based around a police officer named Victoria in Britain, the anime starts with Victoria and her unit responding to some kind of disturbance in an old abandoned church, only for her unit to be slaughtered to the hands of a vampire.
This is one of the best parts: they establish the rules of this world very early, mostly in the first two episodes. You have to be a Virgin to become a vampire, and are a servant to the one who turned you until you drink blood of your own free will. Very simple stuff, and the anime sticks to these rules.
Unfortunately this anime was taken off the air early, so the ending isn't super satisfying, but at least it has one at all.
Either way, 10/10 anime, a must watch for anyone who likes old-school vampires. Find it on Hulu or any anime streaming service
