Person symbol with a plus symbol with appear over your document once you've already linked them to it, but all you is click that button then type the email and if you don't them exactly maybe send them a little message
Hope this helps don't know if you knew you could do that also when managing people link accesses to documents the owner has the choice of editor, comment, or someone who can just view the story. I have you linked to this one as an editor.
