Be my cannoli (Male Protagonist x Male Character)

Please give me your thoughts and opinions

First, I'd really like to make some headway in my Tabris x Zevran story which is currently titled "Alluring", but that could change, idk. My one big issue is that I don't know what kind of character I want Tabris to be and I'd like everyone to vote on which they'd prefer. As of right now, I have two ideas for him:

1. Grumpy, stern, think's Zevran is a little shit, but can't deny how his pp feels when the antivan keeps bending over in front of him. He's tall for an elf, a well-built two-handed warrior. Despite his attitude towards Zevran, the assassin is obsessed with his grumpy face and body and is determined to have the warrior give in to him. Zevran would be topped hard and he'd love every second of it. Their dynamic would be:
Tabris - >:(
Zevran - ;3

2. Pretty boy Tabris, but can and will kill you. Zevran's obsessed with his face, flirts mercilessly, takes advantage of being a little taller. On the outside Tabris acts cold/aloof towards Zevran's advances, but on the inside he's clearly not impervious to the assassin's flirting. Tabris wants to ride him like no tomorrow.
Zevran: "You're breathtaking~"
Tabris: "I know."

My next idea pertains to my Shepard x Garrus trilogy-in-progress "Caught Between A Rock and a Carapace". If I can think of a shorter title that makes a pun involving turians, then I will change it.

This might annoy some people, but I am in the process of rewriting part 1 for the 3rd time...I know, but hear me out: I reread it and I just didn't like it. I feel like my writing style has changed a lot, though to y'all it's probably not visible because most of the changes occur in stuff that hasn't been released. I'm trying to figure out how to write longer scenes instead that skipping around I do. I'd like to write chapters like an actual story, so if I'm able to figure out how, I may eventually move it to it's own book and take it out of this one since it's supposed to be for one shots. I'm not sure, but what I do know is that a lot of my work drafts are in this weird in-between. Not short enough to be considered a one shot, but not organized like a story with chapters. It drives me crazy, now. Reading back, some scenes are too short for my liking and it jumps around too much. I'm reading other peoples fics to get an idea of how they organize theirs. There's just a lot I want to do with my stories, instead of having random blurbs thrown between timeskips. It's a mess, but I want to figure it out, and I want to do the same for part 2.

So I guess my first question would be how everyone felt with Shepard sleeping with other men before Garrus in part 1? I think it's kind of funny that Shepard's so popular with turian men, but I want to mix it up a little. I think I have Nihlus and Chellick's little rendezvous with him figured out, so I won't spoil those, but I can't say I'm as satisfied with the other men I wrote. I think I've established that my Shepard enjoys slutting it up to blow off steam, especially since he's been unable to have one romantic/loving relationship in his life, so he likes being able to experience affection however he can get it.

But I think it's kind of boring and repetitive for him to bang turians one after the other, so what can I do to spice it up? Are there any other male characters you can think of that Shepard can have an experience with? He's after Saren for around 6 months and I like to think he has a high sex-drive, but he also gets progressively busy, so I imagine him taking what he can get, when he can get it.

And how should I make Garrus react when he finds out Shepard's banging all these other dudes? I like making him a little awkward and embarrassed, but I wouldn't mind making him a little jealous, too.
