Dandelion Honey

Ingredients:


About 300 dandelion flowers blossoms

1 liter of water

1 kg of sugar

1 lemon

1 orange


Directions:


Wash the flowers in water to make sure there are no dirt or insects. Then, put them into a pot and pour in 1 liter of water. Slice orange and lemon and add them to the flowers as well. Bring to a boil over medium heat, reduce heat and let it simmer for about 30 minutes. Remove from the heat and let the mixture steep for 6 hours or overnight. Strain and squeeze the liquid with a cheese cloth.


Pour the dandelion juice in a pot. Add the sugar and boil slowly at low heat for 2 to 3 hours, until the mixture has thickened and darkened.


Pour into jars and let it cool down. You can then put them in the fridge. The honey will be thicker when cold. You can add pieces of lemons in the jars before pouring the honey in, to decorate.
