Chicken Katsu Curry:

Ingredients:

For the Chicken Katsu:
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying

For the Curry Sauce:
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 2 tablespoons curry powder
- 2 cups chicken or vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon honey or sugar

Instructions:

1. Prepare the Chicken Katsu:
- Slice each chicken breast in half horizontally to create thinner pieces.
- Season the chicken with salt and pepper.
- Dredge each piece of chicken in flour, then dip into the beaten eggs, and coat with panko breadcrumbs, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium heat. Fry the chicken until golden brown and cooked through, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
