So I had a little trouble figuring this one out, since Mabel and Dipper are twins means they have to have the same godly parent.

                          
I thought about making it either Hermes or Athena, the choice was hard but then I remembered that wisdom isn't just limited to knowledge.

                          
So they're the children of Athena.
