  "The first is a double chocolate cookie with a hazelnut ganache and a milk chocolate shell. The second is a classic white chocolate chip cookie with macadamia butter, in a white chocolate shell. The third is Pecan Sandies, filled with a salted caramel praline with no shell. Fourth is a traditional oatmeal cookie with a maple and peanut butter crème filling, dipped in a maple confectioners glaze. My fifth cookie is the one I am happiest with; traditional Red Velvet with a sweetened crème cannoli filling and dipped in a dark chocolate shell. And lastly, my Red Hatters' favorite - Tart Lime sugar cookies filled with margarita crème, in a sweet and sour lime flavored glaze and edged in course salt." 

Cookie fillings

Cannoli Cream Cheese filling

2cups fresh ricotta (drained)

2cup cream cheese 

1 1/2cup granulated sugar

2Tablespoon Amaretto liquor or 1 teaspoon almond extract

3/4teaspoon ground cinnamon

½teaspoon lemon zest.

Blend all of the above in a blender of food processor until smooth then fold in 

1cup semi-sweet chocolate chips, processed until fine granules

Chill for 1 hour then pipe into cannoli shells or between Red Velvet cookies (or any other kind)  or between cooled layers of cake with a pastry tube or Just Eat It With A Spoon. XD

Margarita Creme Filling 

1 ½ cup heavy cream

¼ cup cornstarch

2 Tablespoons of powdered margarita mix

3/4 c powdered sugar

1 1/2 Tablespoon tequila or 1 teatequila flavoring

½ tea lime zest

Combine in food processor or blender then add 

2 cup soffened cream cheese


Blend until smooth, a few drops of light green food coloring may be added to the mix to alter the color. Chill for an hour. This goes  good with the Lime Cookies below or between layers of cake or as the bottom layer of a lime creme pie... ;-).

Oatmeal with Peanut Butter Maple creme 

2 cups peanut butter, soft

1/2 cup maple syrup

1/4 cup powdered sugar

1/4 cup corn starch

Cookie recipes

Tart Lime Cookies

Pre-heat oven at 375 degrees

2 cup sugar

3/4 shortening - softened

2 eggs (well beaten)

1/2 cup of milk

1 1/2 tea lime extract or 1 Tbs lime juice

1/2 tea lime zest

Cream together wet ingredients and sugar until smooth.

Mix dry ingredients together and fold into wet.

5 cups flour

1 1/2 teaspoon baking powder powder

1/2 tea salt

Chill for 20 minutes to an hour. Roll into balls, press into disk, and place on parchment or sprayed cookie sheet . Bake for 10 minutes.


Oatmeal Molasses cookies 

Pre-heat oven at 400 degrees 

1 cup shortening

1 c white sugar 

1 cup brown sugar 

2 TBS molasses

1 tea vanilla

2 eggs

Cream together wet ingredients.

Sift together Dry ingredients 

2 cups white flour

1/2 tea baking soda

1 tea Baking Powder

1 tea salt

Mix wet and dry ingredients together, then add oats.

1 1/2 cup quick oats

3/4 cup of old fashioned, course oats. 

Roll into  walnut-sized balls for regular cookies, bake 8-10 minutes. Or use an ice cream scoop for and press into disk. Cook for 12-15  minutes. Switch the pans  or turn pans after 6 minutes.
